Top Chef's11th episode of its 22nd season was titled "Calgary, Yahoo!" It saw the final Top 6 (after the Top 6 became the Top 7 again whenChef Cesar Murilloreturned fromLast Chance Kitchen) head to Calgary. At the top of the show, the Top 6 found out that two of them will be eliminated in Calgary, and the final four will get to head to Milan, Italy, for the finale. Plus, the diners were not going to have utensils, so the dishes needed to be hand-held.Chef Connie DeSousafromTop Chef: Canadawas the guest judge. The winner of $10,000 was Shuai with his cornmeal pancake with scrambled eggs, lap cheong (Chinese sausage), cheddar and a chili crisp avocado aioli. For the Elimination Challenge, the extra guest judge wasChef Denia Baltzer, a member of the Łı́ı́dlı̨ı̨ Kų́ę́ First Nations of Northern Canada. The chefs had to use beef and berries to represent the ranchers and the Indigenous people who come together in the Calgary Stampede. The chefs were tasked with deciding amongst themselves who would get which cut of beef and then they had to draw knives for the berries. The combos ended up being Tristen with flat iron and gooseberries, Cesar with ribeye and choke berries, Lana with striploin and haskap berries, Bailey with beef cheek and Saskatoon berries, Shuai with short ribs and black currants, and Massimo with beef tenderloin and elderberries. The winner of the challenge was Massimo with his tenderloin with an umeboshi pickled elderberry sauce, smoked kohlrabi and an elderberry soup puree. After the judges announced the top 3 (Massimo, Shuai and Tristen), they did tell the bottom 3 (Lana, Cesar and Bailey) that they all put forth good dishes. This far in the competition, everyone is a good chef. "At this point in the competition, we're not getting bad dishes anymore…unfortunately, tonight there was just one dish that felt incomplete and someone's going home for a good dish," said judge Tom Colicchio before they announced who was going home. The eliminated chef ended up being Lana with her grilled New York strip with pommes anna, haskap berry condiment, and a sage and smoked haskap berry jus. The judges found the dish to be overpowered by the sage and the steak to be over-rested. They also thought the pommes Anna was a little dry and disconnected from the rest of the dish, like an afterthought. Top Chefairs Thursday nights at 9 p.m. ET/PT on Bravo.
